Just in time for the summer! Easy and oh so healthy Chicken Souvlaki!

This is certainly one of my husbands favourite recipes! He calls it my ‘staple’ dinner dish.

To begin, coat your chicken with very basic ingredients like olive oil, lemon juice, garlic, oregano and salt. Seal in a ziploc bag and refrigerate for at least 30 minutes. The longer you can let your chicken marinate the more flavour it will have.

Next, coat your skewers with cooking spray and begin to alternatively thread your chicken and zuchini onto each skewer. Be sure that your zuchini is cut into thick lengthwise pieces. BBQ over medium-heat until chicken is done, turning once.

For the tzatziki sauce, combine 1/2 cup of fat-free Greek yogurt, shredded cucumber, garlic cloves, 2 tbsp olive oil, 1 tbsp white vinegar and a dash of salt, pepper and dill.

Meanwhile, toss the feta cheese, sliced red onion, halved cherry tomatoes, kalamata olives and quartered cucumbers into a bowl.

Spread whole-grain pita bread with your homemade tzatziki sauce and fill with your Greek salad. You can also serve with a side of brown rice if you like. Garnish with lemon and bon appetit!
