Just in time for the summer! Easy and oh so healthy Chicken Souvlaki!

This is certainly one of my husbands favourite recipes! He calls it my ‘staple’ dinner dish.

To begin, coat your chicken with very basic ingredients like olive oil, lemon juice, garlic, oregano and salt. Seal in a ziploc bag and refrigerate for at least 30 minutes. The longer you can let your chicken marinate the more flavour it will have.

Next, coat your skewers with cooking spray and begin to alternatively thread your chicken and zuchini onto each skewer. Be sure that your zuchini is cut into thick lengthwise pieces. BBQ over medium-heat until chicken is done, turning once.

For the tzatziki sauce, combine 1/2 cup of fat-free Greek yogurt, shredded cucumber, garlic cloves, 2 tbsp olive oil, 1 tbsp white vinegar and a dash of salt, pepper and dill.

Meanwhile, toss the feta cheese, sliced red onion, halved cherry tomatoes, kalamata olives and quartered cucumbers into a bowl.

Spread whole-grain pita bread with your homemade tzatziki sauce and fill with your Greek salad. You can also serve with a side of brown rice if you like. Garnish with lemon and bon appetit!

Kale Salad Served with a Lemon VinaigretteĀ 

This salad is so incredibly delicious and quick to make! 

For your salad:

  • 2 cups Kale
  • 1/2 cup Cherry tomatoes
  • 1/4 cup Quinao
  • 1/4 cup Chickpeas or Lentils
  • 3 tbspns Capers 

For your lemon vinaigrette:

  • 3-4 tbspns Lemon juice
  • 3-4 tbspns Extra-virgin olive oil
  • 2 tbspns Dijon honey mustard
  • 1/4 tspn Sea salt
  • 1 tspn Sugar 
  • Pepper to taste 

Don’t be afraid to get your hands dirty! For best results, gently massage the vinaigrette all over the kale salad evenly. Now dig in!


A Few Back Squat Tips

It’s always a good idea to start your back squat with no weight so that you can really perfect your form! Here are a few things to remember when performing this exercise:

  1. Feet positioning: Stand shoulder width apart. A good little trick is to jump 3x in a row and see where your feet land naturally.
  2. Bar positioning: On top of your traps, at the bottom of your neck. NOT on top of your spine. You also want to make sure that you are holding the bar on each side at an equal distance away from your shoulders.
  3. Squat: Back is flat. Chest is up. Core is strong. Lower your butt as if you were to sit on a chair behind you. Keep everything tight. You want to get just below 90.
  4. Stand it back up. All of the weight should rest in your heels. Don’t forget to squeeze your butt!

And remember to breathe! You want to inhale as you squat down and exhale as you shoot your body back up into a standing position! Once you’ve nailed your form, you can then begin to slowly add weight to your bar.



Tasty Roasted Chickpeas

Chickpeas are known to be high fiber food. Many do not know that 1 cup of chickpeas provides about 1/3 of your daily fiber needs. While you might know that adding more fiber to your diet is good for keeping you regular, there are a number of other health benefits. Fiber in foods like chickpeas keeps you feeling full longer, helping you eat less, which may benefit your waistline.

This snack is so easy and convenient to make as it requires minimal ingredients. Not to mention there are so many seasoning options to chose from.

Preheat oven to 400 degrees F. Drain, rise and use a paper towel to dry your chickpeas. Note, the more water you remove from the chickpeas, the crisper they will get in the oven.

In a bowl, toss your chickpeas with your desired seasoning. I like to use olive oil, sea salt, parmesan cheese, crushed rosemary and garlic powder. You can use any seasoning you prefer. Spray baking sheet with non-stick cooking spray and spread chickpeas on sheet. Bake for 30-40 minutes or until they are nice and crispy.

Other tasty seasoning ideas include cumin, paprika, cayenne pepper, basil, sage and cinnamon. Enjoy!
